“Breakfast tacos”, is a concept popular in here but unknown south of the border. Although no-one lays claim to inventing the breakfast taco, Joe’s, a busy diner- style restaurant, is the last of the pioneers that in the ’80’s popularized this quintessential Austin dish and provides a great range of options. A taco of migas is similar to what in Mexico would be called chilaquiles–corn chips sautéed with salsa, tomatoes and onions, all chopped fine and heaped onto a steaming fresh flour tortilla. Also don’t miss their famous egg and flour grilled bacon taco.
