Flavio Al Velavevodetto

Cacio e Pepe means cheese and pepper and with just 4 ingredients it is the simplest dish in Roman cuisine. It is also one of the greatest when prepared as perfectly as it is prepared here. The Testaccio area is a religious experience for foodies and this is one of its temples.
