The capital of Paella in the region of Valencia is in the rice fields of El Palmar. In Palmar, the citadel of Paella is Restaurant Bonaire and the high priest is Raúl Magraner. Although cooked over gas – not wood – the paella is excellent and with views over the bright green rice fields of El Palmar. Try local starters like eel stew and mullet with red pepper and onion. This is a magical place to visit for foodies and lovers of paella.
