Opposite the church in Vejer sits Casa Varo. Serving lots of local produce including Carpaccio de Atun de Almadraba. This tuna is available all year round as it is frozen when caught at -60 deg. Sliced from frozen, as thin as possible, then sprinkles with dried dill, Extra Virgin Olive Oil, Maldon salt flakes and a well of grated aged Manchego in the centre – this is an unforgettable melt in the mouth experience.
