In the kitchen, award-winning Chef Kisko Garcia offers his creative take on regional cuisine, seeking to surprise the diner with dishes such as crispy suckling pig with cream of garlic and oranges, and traditionally caught fresh tuna cooked in pork stock and roasted on an oak log fire.
