Hospes Palacio del Bailio is set in a former 16th-century palace built on the remains of a Roman villa. Restaurante Arbequina, which spills out into the glass-roofed central courtyard, also features a glass floor that gives a view of the Roman ruins in the basement. In contrast, the restaurant’s modern menu features such creations as pumpkin cream with scallops, citrus and artichokes; fillet of wild sea bass with gazpachuelo, mussels and tapioca pearls; and white chocolate truffle with lemon and cranberry cookie.
